Recipe for vanilla latte from home

Here is a recipe I found somewhere online that I tried this morning. I just added ice to it to make it "iced". It turned out pretty well. I didn't have any regular coffee though, and had to use the vanilla flavored coffee I had, so it just turned out extra vanilla-ie tasting.

  1. Start a double-strong batch of coffee. You only need about 3/4 of a cup.
  2. While the coffee is brewing, heat 1-1/4 cups of milk until it is almost boiling. (I put mine in the microwave for 3 minutes.)
  3. Pour hot milk, coffee, 1 teaspoon of vanilla extract and about 1 tablespoon of sugar into a blender and blend on high. This will froth the milk and help give the latte that foamy, creamy texture. If you don't have a blender, egg beaters will work just fine.
  4. It's as easy as that. Enjoy!

  1. Thanks for all of your nice comments on my blog Jill! I appreciate being able to see what's going on in your life. I read your previous post where you mentioned your frustrations regarding Caleb. I was reminded of a book I have by Stanley Greenspan called "The Challenging Child." In it he addresses five types of "challenging" child personalities. I got it because Madeleine is a highly-sensitive child and I needed some perspective on how to interpret her needs and wants and advice on how to parent a child like this. I don't know if Caleb's personality would be perfectly addressed but the author is really good about outlining some helpful ideas about how to parent our beautiful, wonderful, difficult children. Just thought I'd pass it along. I hope your race goes well!
